This easy-to-prepare dinner has just the right amount of blend of ingredients for a great tasting, New Orleans style meal. This easy-to-prepare dinner has just the right amount of blend of ingredients for a great tasting, New Orleans style meal.
Number of Servings: 9

Ingredients

    Shrimp, cooked, 16 oz
    Canned Tomatoes, 1 can
    Food Lion can of black beans, 1.75 cup
    Zatarain's Gumbo mix with rice, 9 cup

Directions

Gumbo can be prepared with your choice of precooked (1pound of chicken) ,(1pound of sausage), (1pound of shrimp or seafood cut) In this case i used 1pound of cooked and devained shrimp with the shell removed.
1. In a 3 quart saucepan,combine 6 cups of water,meat and Zantarain's Gumbo mix. Stir and bring to a boil. add 1can of diced tomatoes 14.5oz can. then rinse the can of black beans and add them.
2. Stir , reduce heat, cover and simmer over low heat for 25 minutes.

    I made this last night. It was good except I didn't use boxed Gumbo seasoning and rice. I found my own homemade seasoning for gumbo online and used brown rice. I saved 50 calories, 25 milligrams of cholesterol, 6 grams of carbs, & 750 milligrams of sodium. Didn't take any longer to make. Enjoy. - 1/3/12
