Introduction

Salads have become a staple to my meals. I was getting tired of the usual bottled dressings so one day I was going to make my regular poppy seed dressing and I didn't have enough rice wine vinegar so I substituted half lemon juice and was I pleasantly surprised at the taste.
I actually like it better. I then went on and tried using orange juice and lime juice. Each was just as tasty as the one I made with half lemon juice, hence the name Citrus Vinaigrette.

Number of Servings: 10

Ingredients

    1/2c Light Olive Oil
    1/3c Rice Wine Vinegar
    1/3c Lemon, Lime, Orange, or Grapefruit Juice
    1 tsp Dijon Mustard
    1/2c Splenda or Sugar

Directions

Put all ingredients into a blender and blend for 2 minutes or until it becomes creamy in texture.

Makes a little over 1 cup
Serving size 2 Tbsp.
