Introduction

Ingredients

5 c peaches (peeled and chopped)
3 c sugar
1/2 c lemon juice
1/2 c amaretto
Directions
Prepare/sanitize canning jars by boiling in a water bath about 5 minutes. (Uses 8 1/2 pint, or 4 pint jars.)
To peel peaches easily, score an X in one end and drop in boiling water for about 3 minutes. Remove from water w/slotted spoon and the skins slide off fairly easy from there. Chop skinned peaches into 1/2" pieces (if mushy and falls apart, it doesn't matter - throw it in too).
In a large pot combine peaches, sugar and lemon juice. Bring to a full rolling boil that doesn't stir down. Add in amaretto and return to a boil. Reduce heat and simmer 15 minutes or until desired thickness (I let mine go about 30+ minutes).
Transfer hot fruit into hot, sanitized jars. Screw on lids. Place in a large pot covered w/abou 1" of water. Boil for 15 minutes.
