Ingredients

    Zucchini, baby, 1 large sliced
    \yellow Peppers (bell peppers), 1 pepper, sliced
    Coconut Milk, 3 tbsp
    Lemon Juice, 1 lemon
    Coriander leaf, dried, 2 tsp
    Hot Chili Peppers, 1 pepper finelly chopped
    Cod (fish), 2 fillet (I put cod on here but I try and use Pollack or another more sustainable white fish)

Directions

Mix Coconut milk, lemon juice, coriander and chili pepper together in a bowl.
Cut two pieces of foil large enough to wrap fish and vegetables.
Place a fillet of fish in each with half the zucchini and pepper on top.
Pour over the sauce and place in the oven at Gas mark 5 for 20 mins.
Servee with rice.
