Ingredients

    1/2 stick margarine
    2 c. chopped onion
    1 c. chopped celery
    1 c. sliced mushrooms
    2 c. shredded carrots
    1 1/2 c. matzo meal
    1 c. red pepper, diced
    1 c. green pepper, diced
    2 packages (10 oz.) frozen spinach, thawed and drained

Directions

Prehead oven to 350. Spray a 9X13 baking dish with nonfat cooking spray. Squeeze liquid out of thawed spinach. Saute the onion, celery, and mushrooms in the margarine for about 10 minutes, stirring often. Put the mixture into a large bowl. Add the carrots, matzo meal, spinach, and eggs. Mix well. Pur into the greased casserole dish. Bake for 40-45 minutes until firm.
