Ingredients

1 1/2 lbs Chicken Breast (with no skin)
7 servings Ritz crackers (one package)
1/4 c. grated parmesan cheese
1/2 stick butter or margerine
Parsley to taste (I use a little under 1/4 of a cup)
Directions
Pre-heat oven to 400 degrees.
Melt margarine or butter in the microwave and allow to cool.
Cut chicken breasts into tenderloin size pieces and flatten with a mallet.
Crush Ritz crackers in a baggie and pour into a small bowl.
Mix Parmesan cheese and parsley with the Ritz crackers.
Roll chicken tenderloins in margarine and then roll in crushed Ritz crackers.
Place chicken on a shallow baking pan (I line with parchment paper to make clean up easier and prevent sticking)
Bake chicken on middle rack for 30 to 40 minutes. (based on thickness of your chicken)
Makes 8 - 10 servings – nutritional information is based on 8 servings
Options: Substitute wheat Ritz crackers for the regular Ritz crackers to lower fat and carb count. Also, you can use low fat milk instead of butter for dipping the chicken.
You can also purchase chicken tenderloins precut rather than cutting them yourself. At my grocery store it is cheaper to purchase the whole breast and do it myself.
Leftovers taste wonderful on a salad too!
