Introduction

This is my modification of an old recipe a coworker gave me years ago. I make this all the time. Very tasty and satisfying. I wish I could give credit to the originator of this recipe. Ingredients

    1 lb bag of lentils prepared as instructed and rinsed.
    1 small can mandarin oranges
    1 half red onion finely chopped
    2 cloves garlic finely chopped
    8-10 baby carrots finely chopped or grated
    1/4 cup extra virgin olive oil
    teaspoon of salt
    teaspoon cumin
    half teaspoon of black pepper
    1 tablespoon finely chopped mint if i have it on hand.

Directions

gently mix all ingredients I add the mandarins last as they are easily damaged.
