This crunchy salad makes a satisfying, low calorie, low fat, low carb side dish that is big on flavor & perfect for a summer picnic. Super easy to prepare. Ingredients

    6 cups fresh cauliflower florets
    1c. fat free mayonnaise
    1c. 2% milk -cheddar or mexican cheese, shredded
    1 envelope Good Seasons Zesty Italian salad dressing (dry mix)

Directions

Place the cauliflower florets in a large bowl. Sprinkle the cheese over the cauliflower, spoon the mayonnaise over the cheese & sprinkle the dry italian dressing over the mayo. Cover tightly and allow to chill in the refrigerator 12-24 hours. Mix all ingredients together before serving. Serve as a side dish or a light lunch on fresh greens. Makes 8 servings.
