Ingredients

1 Young Coconut (these are white on the outside) - including all the juice and meat inside
    1 small banana
Handful of Raw Cacao Beans (approx. 2 oz.) (can substitute raw carob powder, but the cacao beans are better!)
1/2 cup Almond Milk (you can make it raw, if you want, I just use the store bought kind)
5 or 6 drops Stevia extract
5 or 6 Ice Cubes (optional)

Directions

Young coconuts and raw cacao beans may seem like expensive ingredients, but this smoothie costs less than a grande mocha frappuccino, and will be much more nutritious, more delicious, and more energizing!

1) Place banana in blender
2) Grind raw cacao beans in a coffee grinder, or food processor and add to blender
3) Open the coconut, pour the juice into blender, and scoop out the soft inner flesh with a spoon and add it as well.
4) Pour in just enough of the almond milk to acheive your desired consistency.
5) Add the ice cubes
6) Blend away until smooth!

How to open the young coconut:
Using a very large knife, carefully cut the softer outer shell away at the pointy end of the nut to reveal the hard, woody inner shell beneath. Gently chop around this hard inner shell making a circle around the top, and when you find a soft spot, carefully wedge the knife in, and pry it open. Keep the nut upright, so as not so spill all the juice inside!

OMG this was amazing!!! And I didn't even have all the ingredients on hand! Used young coconut, 1 oz of Cacao nibs, small banana (80 grams) and lots of ice. Put it in the Vitamix until all the nibs fully processed. I am going to make this often!
