Ingredients

1/2 of a Canteloupe Melon
4 thin slices of Prosciutto
8 Tbsp Balsamic Vinegar
1 dried Fig
Directions
Use a melon baller to scoop out pieces of canteloupe in little spheres. Set them aside. Then slice the prosciutto in long thin strips. Take one melon ball & wrap it with one strip of proscuitto. Then secure it by putting a toothpick through it. One by one do this until all melon balls are wrapped and skewered with a toothpick.
Put the fig and the balsamic vinegar in a small saucepan. Boil the balsamic vinegar and the fig stirring constantly until it thickens to the consistency of a light syrup. Then drizzle it over the skewered Melon & Proscuitto on a plate. Serves 2
