Ingredients

    1/2 c. egg beaters ( or 2 whole eggs)
    1/3 c. fat free cottage cheese
    1/3 c. oatmeal
    1 tsp vanilla ( or other flavors if desired)
    1/2 packet Splenda ( more or less depending on how sweet you like it)
    1/2 tsp baking powder
    1/4 tsp cinnamon ( optional)

Directions

makes @ 3 6" pancakes

Mix all ingredients in blender ( magic bullet style works great).
Let batter sit for @ 3-5 minutes to thicken.
Spray skillet/griddle with cooking spray.
Over med/high heat, pour batter into pan.
Cook for 3-5 minutes or until bubbles on surface pop. Flip pancake and cook for another 2-3 minutes.
Serve with sugar free syrup or fruit.
