A great breakfast-on-the-go idea or a nice light snack. Use your own favourite veggies to make it your own. Ingredients

    1 package (10 oz) frozen chopped spinach
    1 cup liquid egg substitute (egg beaters or similar)
    1 cup shredded, reduced-fat cheese (works best with cheddar or swiss but any cheese will do)
    1/4 cup diced green bell peppers
    1/4 cup diced onions
    3 drops hot pepper sauce (optional)

Directions

Microwave the spinach for 2 1/2 mins on high and drain excess liquid.

Line a 12 cup muffin pan with foil baking cups (don't forget to remove the paper lining :) Spray the cups with cooking spray.

Combine the egg substitute, cheese, and veggies in a bowl. Mix Well.

Divide evenly among the muffin cups. Keep in mind mixture will puff during cooking so only fill about 1/2 way.

Bake at 350 F for about 20 minutes or until knife inserted in center comes out clean.

2 Quiche Cups = 1 serving
