    Ingredients:


    Orange Roughy (fish), 1 lb (remove)
    Apricot or Pineapple Preserves, 3 tbsp (remove)
    *Nakano Seasoned Rice Vinegar, 2 tbsp (remove)
    Thyme, fresh, 2 tsp (remove)
    Pepper, red or cayenne, 1/8 tsp (remove)
    Garlic, 1 clove, minced (remove)
    Pepper, black, 1/4 tsp (remove)
    Salt, 1/8 tsp (remove)


Directions

Preheat broiler. In a small bowl stir together preserves, vinegar, snipped thyme, red pepper, and garlic; set aside.

Rinse fish; pat dry. Cut into 4 serving-size portions. Sprinkle fish with black pepper and salt. Place fish on a greased unheated rack of a broiler pan. Broil fish 4 inches from the heat until the fish flakes easily when tested with a fork, brushing occasionally with the preserves mixture. (Allow 4 to 6 minutes per 1/2 inch thickness of fish; if fillets are 1 inch thick, turn once halfway through broiling.). If desired, garnish with thyme sprigs and pineapple wedges.

    I had to improvise because I didn't have the Nakano Seasoned Rice Vinegar or Apricot preserves. Substituted Rice Vinegar and Peach preserves instead. I tasted great. I can't wait to see what it tastes like when I get all the right ingredients. - 2/23/09
