Introduction

I made this up one night out of stuff I had on hand...it turned into a new favorite! Using thawed, precooked shrimp, this takes minutes to make. Ingredients

    6 oz. thawed, precooked shrimp (about 24 pieces)
    3/4 c. frozen shelled edamame
    1 c. halved and sliced zucchini
    1/2 c. green beans
    1/2 c. bean sprouts
    3 c. spinach, divided into two bowls
    4 tbsp. Kraft Light Asian Sesame dressing
    Olive oil
    Salt & Pepper
    Garlic powder
    Old Bay Seasoning

Directions

Heat 1 tbsp. olive oil on medium heat in a large wok or skillet. Toss in shrimp and season with salt, pepper, garlic powder, and Old Bay. Stir fry for a minute or two to coat the shrimp with the seasonings (don't cook too long or the shrimp will get chewy).

Add the beans, edamame, and zucchini. Season with salt and pepper to taste. Stir fry for 3-4 minutes or until veggies are crisp-tender. Add half the sesame dressing and stir fry for another minute or until warmed.

Meanwhile, drizzle the spinach with the remaining dressing. Spoon the stir fry mixture over the spinach, top with the bean sprouts, and serve.
