Ingredients

    1 tsp olive oil
    1/2 cup onions chopped
    400g boneless, skinless chicken breast
    3.5 cups water
    1.5 cups Uncle Ben's wholegrain brown rice
    1 tsp chicken bouillon
    1/2 cup dried apricots chopped
    1/2 cup raisins
    1/2 tsp cinnamon
    1 tsp cumin
    1/2 cup almonds chopped

Directions

Heat olive oil in a large non-stick skillet.
Add chicken and onions and sautee until chicken is lightly browned.
Meanwhile, put water rice and chicken bouillon in a medium pot and bring to a boil. Reduce heat and simmer, covered for 15 minutes.
Add apricots, raisins, and spices to rice and continue to simmer for 5 more minutes.
Add rice mixture to onions and chicken and cook on high for about 2 minutes stirring constantly.
Garnish with almonds and serve.

    Amazing flavours! I seasoned the chicken as well with the cinnamon & cumin plus some salt & pepper before sauteeing. This is a keeper, my DH even ate the brown rice without hesitation; he loved it! Thanks for sharing. - 6/19/09
