Ingredients

    1 large Eggplant, sliced
    Salt, 2 tsp
    Pepper, black, 1 tsp
    Buttermilk, lowfat, 1.5 cup
    Paprika, 1 tsp
    All purpose Flour 1 cup
    Creole Seasoning, 3 tsp
    Panko Bread Crumbs, 2 cup

Directions

Preheat oven to 400.
Cut eggplant into 1/4 inch slices. Spinkle with salt and pepper. Pour buttermillk into shallow dish. Stir together panko, creole seasoning, and paprika. Dredge eggplant in flour. Dip in buttermilk, and dredge in panko mixture. Bake at 400 for 18 to 20 minutes or until golden brown, turning once after 10 minutes.

    Very Good
    You can leave out the salt and make your own version of creole seasoning with just a bit of italian herbs and cyanne pepper and it tastes just as good with less than half of the sodium content. - 8/13/09

    Yeah, I agree too much sodium to make on any regular basis. I mainly entered it in because my wife made it and I wanted an easy way to put it in our calorie counter. You could probably tinker with it to make it a little better.
