Ingredients

    5 cups pinto beans
    2 cups chopped onion
    1/2 pound bacon or salt pork
    1 cup molasses
    1/2 cup packed brown sugar
    2 tsp dry mustard
    1 tsp salt
    1/2 tsp pepper

Directions

soak beans over night. Drain and add to a large pot with 16 cups fresh water. Bring to a boil and reduce heat simmering about 75 minutes or until beans are tender.

Drain beans and save the liquid.

In a casserole dish combine beans, bacon, and onion. Stir in 1 cup of the leftover bean liquid and the rest of the ingredients.

Bake covered in a 300 degree oven for 2.5 hours or to desired consistency, stirring occasionally. Add more liquid if neccesary. Makes 20 servings.
