An easy mexican rice that can be eaten alone, or put into a tortilla for a delicious burrito. You can play around with how much of each ingredient to use, so the amounts I used are variable. Ingredients

    Uncle Ben's Instant Whole Grain Brown Rice (Any rice can be used)
    Green Giant Mexicorn (canned)
    1 Green Pepper
    1 Onion
    1 Tomato
    Salsa (Any brand, Mild, Medium, or Hot. I use Mild)
    Mexican Cheese (I use Sargento)
    Taco Seasoning (Optional)

Directions

Chop up as much Green Pepper, Onion, and Tomato as you would like in the rice. Put Mexicorn in a pan and cook until done. Put Uncle Ben's Rice in the Microwave for 90 seconds (Obviously If you are using the 90 second instant rice. If not, cook rice as instructed). Put green peppers and onions in a large skillet with either butter, margerine, olive oil, or substitute of your choice. After a few minutes, pour rice, corn, and salsa in the skillet. Cook and stir in cheese until melted. Last, throw the tomatoes in and cook for another minute or two. Now you have delicious Mexican rice that tastes amazing as a burrito!
