Introduction

The red and yellow potatoes in this soup make the soup more filling, more flavorful and higher in potassium. It makes a lot because I freeze it in meal-size containers to take to work or school. Ingredients

    1 roasting chicken (about 5 lbs.)
    6 c. water
    1 Tbsp. black pepper
    1 tsp garlic salt
    1 c. cubed red potatoes
    1 c. cubed yellow potatoes
    2 c. frozen mixed vegetables

Directions

We cook two chickens one night and use the double boiler to make stock from the leftovers the next day but you can just cook down one that day if you like. Since it takes a while, I like to split it up into two efforts.
Take all the drippings from the chicken and the water and start them in the slow cooker (or at a simmer on the stove) About an hour before serving, add the remaining ingredients.
Makes about 22 1- cup servings.
