Ingredients

    3 garlic cloves, crushed
    1 Tbs fish sauce
    1 Tbs soy sauce(low sodium)
    2 Tbs lime juice
    1 stick lemon grass, finely chopped (ground lemon myrtle)
    1 Tbs Maggi seasoning (can you get this?)
    480g chicken breast, skinned, halved
    1 lg onion cut in 1/4s
    1 red chilli, thinly slied(optional)
    1 cu low salt chicken stock
    100g shitake mushrooms (or mushrooms!!)
    4 spring onions, cut into 4cm lengths
    600g chinese cabbage, shredded

Directions

Combine garlic, sauces, lime juice, lemongrass, seasoning and chicken breasts in bowl.
Cover and stand in fridge for at least 2hras or overnight
Preheat oven 180C
Place chicken an marinade into oven proof dish with lid.
Add onion, chilli and stock and mix to combine.
Cook covered for 45 min.
Add the remaining ingredients and continue cooking, covered, for 15 min.
Serves 4
