Introduction

These are better than plain oatmeal raisin cookies. Higher calorie, but worth it! These are better than plain oatmeal raisin cookies. Higher calorie, but worth it!

Ingredients

    1 cup Butter (can also use margarine, but butter tastes better!)
    2 c Packed Brown Sugar
    2 Eggs
    1/2 cup water
    2 c All purpose Flour
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Salt
    4 cups Rolled Oats (1/2 quick and 1/2 old Fashioned)
    1 cup Shredded Coconut
    1 1/2 cups Raisins
    1 cup Chopped Pecans (or Walnuts)

Directions

1. Cream butter and sugar. Beat in eggs and water.
2. Sift together flour, baking powder, soda, & salt. Add to butter and sugar mixture.
3. Add remaining ingredients. Mix well.
4. Drop by teaspoonfuls onto greased baking sheet (spray with Pam).
5. Bake at 350 degrees for 12 min.

Makes 6 dozen cookies. These freeze well and stay fresh longer if you freeze them and just pull out a few as you need them.
