Introduction

I made this for the first time yesterday and took it to my daughter's girl scout meeting...there was only 2 slices left by the end of the meeting, and hubby ate those as soon as I got home with it! every one loved it! Ingredients

    1 (18.25 oz) strawberry cake mix
    3 large eggs
    1 cup water
    1/3 cup vegetable oil
    2-1/2 cups strawberries, stems removed
    1 (3.5 oz) pkg instant vanilla or banana flavored pudding mix
    1 cup skim milk
    2 cups light Cool Whip
    1 cup sliced fresh strawberries

Directions

In mixing bowl, combine cake mix, eggs, oil and water according to package directions. Bake in 13x9 greased pan in 350 degree oven for 35 minutes, remove from oven and cool completely. Puree the 2-1/2 cups of strawberries in a blender or food processor til smooth, pour over cooled cake, spreading to cover completely. In a medium mixing bowl, whisk together pudding mix and milk til thickened. fold in cool whip until well blended. Pour over pureed strawberries on cake, spread evenly. Cover lightly and refrigerate for minimum of 4 hours. Top with sliced strawberries right before serving. Makes up to 24 servings.
