Introduction

This is a terrific fruit tart using fresh blueberries -- but could use other fresh fruit. This is a terrific fruit tart using fresh blueberries -- but could use other fresh fruit.

Ingredients

    10 graham crackers
    1/4 cup crystallized ginger
    1 tablespoon sugar
    pinch salt
    3 tablespoons butter, melted
    1 large egg white
    2 cups Greek yogurt
    2 tablespoons honey
    1-1/2 cups blueberries

Directions

The night before: Strain the yogurt in cheesecloth over a bowl.

Preheat oven to 350 F. Spray or grease tart pan. Pulse crackers, ginger, sugar, and salt until fine in food processor. Add butter and egg white and mix. Line tart pan and bake 20 minutes, until browned.

Mix yogurt and honey and add to tart shell after it has cooled. Top with blueberries.
