Ingredients

    One white box cake mix (any brand)
    Smart balance buttery spread 3 Tbls
    water 1 and 1/3 c.
    egg whites (4)
    2 small boxes or one large box SF strawberry jello
    Cool Whip Free
    Fresh strawberries/blueberries

Directions

Put cake mix in large mixing bowl, add 1 and 1/3 cup water. 3 Tbls. melted Smart Balance spread, and 4 egg whties. Mix the ingredients together and spoon into cupcake tins with liners. Bake according to directions on the cake mix package. While baking put a large jello package into medium glass or stainless bowl (I use strawberry) and mix with one cup boiling water and one cup COLD water...let sit.
When cupcakes are done and still HOT...poke a hole in the middle of each cupcake with the handle of a wooden spoon. Pour jello mix into each cupcake and set pan in the refrigerator for at least one hour. Decorate each cupcake with Cool Whip Free and fresh strawberries/blueberries. Enjoy! Makes 24 delicious cupcakes

    Okay ----- ONE serving is 24 cupcakes? Even SP cannot surely mean cupcakes made from a boxed mix and plastic butter-spread with chemical-laden jello and cool whip is practicing moderation! - 7/5/12
