Ingredients

    80g pasta
    9 Sun-dried tomatoes
    3 tbsp extra light mayonaise
    pinch dried Basil
    pinch Oregano
    handful watercress or Rocket
    40g Walnuts

Directions

1. Cook the pasta following package directions.

2. Meanwhile, put the sun-dried tomatoes in a bowl and just cover with boiling water. Set aside to rehydrate for 10 minutes, then chop into 1cm pieces.

3. Once the pasta is cooked and drained, stir in the rest of the ingredients. This can be served warm or at room temperature.

    Love the fresh taste of watercress and the spicy kick of rocket (arugala). Subbed zoodles for the pasta. Subbed plain greek yogurt for the mayo and added a little garlic and onion powders. - 9/7/19

    Good
    Quick and easy. Not a fan of mayo so wasn't sure I'd like it but it was actually really good. I'll make it again. I added pepper and a small pinch of salt. Next time I think I might add some mushrooms and maybe a pepper or two. - 5/31/10
