Introduction

Don't let the amount of garlic scare you. It is very mild. Although the recipe calls for chicken breast I often use a whole chicken skinned and cut into pieces. Don't let the amount of garlic scare you. It is very mild. Although the recipe calls for chicken breast I often use a whole chicken skinned and cut into pieces.
Number of Servings: 4

Ingredients

    4 boneless, skinless chicken breasts
    1 cup white wine
    4 stocks celery, chopped
    1 large onion, chopped
    20 cloves garlic
    Salt and pepper to taste
    2 tsp dried tarragon

Directions

Place chopped onion, celery and garlic in bottom of heavy dutch oven (large pot). Place chicken breasts on top. Pour wine over all. Sprinle with salt, pepper and tarragon. Cover and bring to a boil. Turn down and simmer for 30-45 minutes. Take top off, remove chicken to a warming plate. Simmer sauce to reduce for 5-10 minutes depending how much sauce you want. Return chicken to sauce and serve with rice or quinoa. Garnish with chopped parsley or fresh tarragon.

    Skipped the white wine, celery, and onion. Used FF chicken stock and two boneless skinless chicken breasts. - 2/28/12
