Introduction

This is the basic traditional Masala that I bottle and keep for making Fish Curries.Grinding this fresh everyday is too tiresome so I make this in bulk these days and keep.This has a long shelf life but I prefer to keep it in the Refrigerator as this keeps the flavours fresh. Ingredients

    500gms.Dry Red Chillies
    OR
    500gms.Red Chillie Powder
    200gms.Coriander Seeds
    50gms. whole Turmeric Sticks(Halkund/Haldi ki Gaanthey)
    OR
    50gms.Turmeric Powder

Directions

If using whole Dry red Chillies break off all the stalks.Break the whole Turmeric Roots into small bits.Grind these two together with Coriander Seeds to form a fine Powder.I sieve the contents and re-grind the residue till all of this is powdered.
If using powdered Chilli Powder and Turmeric first grind the Coriander Seeds fine.In a mixing bowl mix all three Ingredients thoroughly well.
Bottle in a dry airtight Jar and keep.
