Ingredients

    8 oz red potatoes
    1/8 tsp. salt
    dash black pepper
    1/4 tsp. onion or garlic powder (optional)
    Pinch of parsley (optional)

Directions

Wash and slice potatoes. Spray skillet with cooking spray and heat over medium heat. Add potatoes. Cover and cook for 5 minutes. Remove lid. Lightly spray potatoes with cooking spray and sprinkle with seasonings; toss lightly to distribute seasonings. Let cook over medium heat for 8- 10 minutes until brown on one side. Turn potatoes in sections and brown on the other side.


For Home Fries-- cut potatoes in wedges and increase initial cooking time to 10 minutes.


For Hash Browns-- cut potatoes in small cubes and continue with same directions.

    Incredible!
    I used russet potatoes because it's what I had on hand. After cooking I sprinkled with malt vinegar. YUM! This is a GREAT way to enjoy fried potatoes without guilt! - 2/25/10
