Ingredients
-
1/2 cup red lentils
3/4 cup chana dal (or yellow split peas)
5 cups water
1 Tbsp vegetable oil
1 large onion, diced
3 cloves garlic
1 can diced no-salt tomatoes
1/2 tsp. turmeric
1/2 tsp cayenne pepper
1 tsp garam masala
1 tsp cumin seeds
Directions
Bring 5 cups water to a boil. Add the lentils and chana dal, bring back to a boil, then cover and remove from heat. Let sit for 2 hours.
Add the turmeric and cayenne pepper to the lentils, and bring back to a boil. Lower heat, cover and simmer for 35 minutes, or until most of the liquid is absorbed.
Dice the onions and garlic and sautee on medium high heat in the vegetable oil for about 3 minutes. Add the garam masala and cumin seeds and sautee for another minute. Add 1 can of diced tomatoes to the onions, lower heat, and simmer for 10 minutes, or until the tomatoe juice is somewhat reduced.
When the lentils are done cooking, add the tomato and onion mixture to the lentils. Stir and simmer together for 2 or 3 minutes so all the spices can blend together.
Serve with a dollop of Greek yogurt and a side of naan.
Makes 4 servings for dinner.
