Number of Servings: 6


    6 cups of half moon sliced yellow squash or zucchini
    1 large onion sliced
    1tbsp olive oil (for saute)
    1/2 C reduced fat sour cream (can also use cream cheese)
    Salt, Pepper, Garlic poweder to taste
    1 C shredded cheddar cheese


Makes 6 servings

Saute Squash, Onion, and Oil until broken down (about 20 mins)
Add Sour Cream, Cheese, and Seasonings
Saute an additional 10-15mins

  • Don't use a low-fat or fat free sour cream. The "light" versions of dairy products and salad dressings often contain more sugar than the full fat versions. If your goal is low-carb, then you should use the regular sour cream. - 4/10/13
