Introduction
I'm totally in love with this recipe. Use fat-free mayo, unsweetened coconut and (American) neufchatel cheese to cut the calories. I think it's technically a salad, but it tastes like dessert. Ingredients

2 cups shredded carrots
1 20-oz can of pineapple tidbits in pineapple juice, drained (I used crushed pineapple)
1 cup shredded coconut (I used sweetened but will try unsweetened next)
3 oz. cream cheese, softened
1/2 cup mayonnaise
1/2 cup cool whip
Directions
Mix carrots and pineapple. Cover and refrigerate overnight. When ready to serve: add 1 cup coconut.
To make the dressing: Mix the softened cream cheese, mayonnaise and cool whip together. Add to salad and stir to mix.
Makes 8 1/2-cup servings
