Introduction

My mom's recipe. One of my favorites. SO delish! My mom's recipe. One of my favorites. SO delish!
Number of Servings: 4

Ingredients

    4 Pork Chops (1 per person)
    salt, pepper
    1/2 c. Uncooked white rice or partially cooked brown rice*(see note)
    10.25 oz can or jar beef gravy
    1/4 c. water
    1 c. chopped onion or 1/2 c. dehydrated onion
    2 large carrots
    1 c. sliced mushrooms

Directions

Heat Oven to 350 degrees. Brown chops in skillet, salt and pepper them. Place in square casserole. Add uncooked rice to skillet (If using brown rice do this also). Brown rice in grease. Stir in gravy, and water. Arrange onions and carrots on top if chops. Pour gravy on top. Cover with foil Bake 1 hour. until veggies and chops are done.
*Note: I tried this using brown rice and it still crunched slightly. You may want to cook it for about 10 or even 20 minutes to soften some. I have also done this in the crock pot. I think its better in the oven, but if you want directions for crock pot..let me know.
