Ingredients

    5 eggs
    1 T water
    1/4 cup salsa
    1 T butter
    1 T olive oil
    tortilla chips
    1 onion, chopped
    4 oz diced green chiles
    2 medium tomatoes, chopped
    1/2 avocado, chopped & sprinkled with lemon juice
    2 T fresh cilantro
    1 cup cheddar cheese

Directions

In a small bowl lightly beat together eggs, water, and salsa. Set aside. Warm butter and olive oil in skillet. Add tortilla pieces or chips. Add onion and saute until transparent. Stir in chopped green chiles. Pour egg mixture into Skillet, scramble until eggs are done. Add in tomatoes, cheese, cilantro and avocado. Stir well.

    Can you please clarify the "T" is that teaspoon or table spoon? I would love to try this I never though of adding chips to my eggs before yummy! - 7/4/09
