Ingredients

    1 cup cottage cheese
    1/4 cup flour
    1/4 tsp. salt
    2 T. butter
    1/4 tsp. cinnamon
    3 eggs

Directions

Blend all ingredients until smooth. Cook on a non stick grill. Make a double batch and freeze leftovers. Enjoy!

    Great pancakes! I made these with light butter, which probably cut the fat by about half, and served them with Maple Grove Farms sugar free syrup. I enjoyed guilt-free pancakes for the first time in years. Thanks! - 6/19/10

    I'm glad you enjoyed them. I like the idea of light butter! You can always cut the fat by using 2 egg whites and 1 whole egg!

    Glad you and your kids enjoyed these. My son and his babysitter loved them when he was little. I would make several batches and freeze them so they could enjoy them anytime!

    Thank you for this recipe! I used to make these years ago and lost my copy. These are light and delicious. I'm so glad to be able to make them again. Sometimes I omit the cinnamon and add orange zest and a touch of almond extract for something a little different. - 8/27/10

    DISGUISTING!!!!!!!!!!!!! I could not get these to cook at all! The center was raw and doughy. I wound up throwing the whole batch away. - 5/20/12
