Introduction

I've been preparing this pasta salad for many years, only recently substituting Barilla multi-grain for the plain variety. Whichever type of pasta you use, it's a sure-fire crowd pleaser - one that's chock full of fresh veggies! I like it with just a drop or two of Frank's Hot Sauce added to the mix, but you can leave it out, if you prefer. The recipe is a standard around our household as a spring and summer side dish accompaniment to everything from grilled mahi mahi to hot dogs - the family loves it! I find that the juices from the vegetables make the 6 T of mayo stretch! One final note: It's especially pretty and colorful when served on a bed of romaine or fresh spinach! Ingredients

    Barilla Plus macaroni (penne, rotilli, farfalle, etc. - I like to mix pasta shapes together!); Hellman's (or Best Foods) regular or olive oil mayonnaise, celery, red/green/or/yellow bell pepper, onion, ripe tomatoes, seasoned salt, black pepper, dash of Frank's Red Hot Sauce (optional - PLEASE NOTE THAT I'VE INDICATED ".01" tsp of Frank's Hot Sauce. We're talking just a DROP or two. )

Directions

Add 8 oz of dry macaroni to a pot of rapidly boiling water (you can salt it, if you prefer); while macaroni is cooking, add chopped vegetables to large salad bowl and mix to blend flavors. Add mayonnaise, hot sauce, seasoned salt and pepper to vegetable mix and blend well. Cover and set aside.

When macaroni is cooked to your preference (see cooking directions on your product) - I personally like my macaroni prepared "al dente", pour macaroni into colander, and rinse under cold water to cool, and until 99% of the water is drained. You don't want the macaroni to be "dry"...you want it to still have some wetness to it. Add this macaroni to the salad bowl of chopped veggies and mix well.

You'll find that between the juices from the veggies, and the dampness of the macaroni, those 6 T of mayo will be enough.
