Introduction

This soup is one of my favorites. It is easy, can cook in the crock pot, and freezes great! You can also add any type of lean meat to beef it up a little bit. Ingredients

    1 Can of Black Beans, drained
    1 Can of Kidney Beans, drained
    1 Can of Pinto Beans, drained
    1 Can of White Corn
    1 Can of Diced Tomatoes
    1 Can of Rotel Tomatoes with Diced Green Chilies
    1/2 an onion
    3 cloves of garlic
    1 packet of ranch dressing mix
    Southwestern seasoning
    Paprika
    Red Pepper Flakes
    Oregano
    2 C. water
    Sour Cream (if desired)
    Cheddar Cheese (if desired)
    Crumbled Tortilla Chips (if desired)

Directions

Chop onion and garlic and put in large pot. A crock pot can be used as well. Open and drain all the beans, and add to pot. Add corn, tomatoes, and chilies to pot. Stir ranch packet in the water and add to pot. Generously sprinkle Southwestern seasoning in pot. Add paprika, pepper flakes, and oregano to taste. Cook until beans are tender. Garnish with sour cream, cheese and crumbled tortilla chips if desired.
