Number of Servings: 8

Ingredients

    1lb Ground Turkey
    1 medium onion chopped
    1 cup of of uncooked rice
    1 can diced tomato
    1 can rotel
    1 can of beef broth
    2 cans pinto beans drained
    1 cup of corn
    1 package of chili seasonings or taco seasonings
    1 cup of cheese

Directions

serving size is is about 1.5 cups

First get rice started (should make two cups)

Then brown the ground turkey and onions

Add all the cans and let it simmer for 20-30 minutes

Pour cowboy soup over rice and sprinkle some cheese on top
