Ingredients

    3 cups all-purpose flour
    ¾ tsp. salt
    1 tsp. baking soda
    2 cups sugar
    2 tsp. cinnamon
    1 cup chopped pecans
    3 lg. eggs
    ¼ cup vegetable oil
    1 cup unsweetened apple sauce
    2 ½ shredded zucchini
    2 tsp. vanilla extract

Directions

Combine all ingredients together in a large bowl. Stir only until all dry ingredients are moistened. Spoon batter into greased and floured loaf pans. (I use a variety of sizes but the recipe will fill 2- 8 ½ X 4 ½ X 3 inch loaf pans). Bake at 350 degrees for 70 min. (less if using smaller pans) until a wooden pick inserted in the center comes out clean. Let cool for 10 minutes then take them out of the pans to cool completely. Makes 24 slices-1 slice=1 serving

    When it says 2 1/2 zucchini does that mean 2 1/2 large, small or 2 1/2 cups. I would really like to make it. thanks - 7/10/09
