Ingredients

1 1/2 teaspoon extra virgin olive oil
1/2 sweet onion thinly sliced lengthwise
1 teaspoon apple cider vinegar
1/4 teaspoon chopped fresh rosemary
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/5 lb 93% lean ground turkey
2 medium portobello mushrooms (stems and gills removed)
1 1/2 teaspoon Worcestershire sauce1/4 cup finely shredded fontina cheese
Directions
Position rack in the lowest position, pre-heat oven to 400 degrees
Place oil and onion in a large skillet over medium heat. Cook stirring occasionally and reducing heat as necessary to prevent scorching, until softened and starting to turn golden (about 20 min) Stir in vinegar
Combine rosemary, salt, and pepper into a small dish. Place turkey into a medium bowl and sprinkle the spice mixture over it. Gently knead to combine. Form into 2 equal balls. Rub mushromms on both sides with Worcestershire sauce. Place one turkey ball in each mushroom cap, patting down to fill the cap. Place on baking sheet.
Bake stuffed mushrooms on the bottom rack at 400 degrees for 20 min. Remove from the oven, apply onion mixture over the top of the mushrooms and top with cheese. Continue baking for 10 min (until chese is melted and golden, and turkey is cooked thoroughly)
