Introduction

Ingredients

2.5 cups lukewarm water
1 Tbsp salt
7 cups strong bread flour
4 tablespoons olive oil
1 tablespoon sugar
2 1/4 ounce packets of yeast
Flour for dusting, olive oil for drizzling
Directions
Mix lukewarm water, sugar, olive oil, and yeast in a bowl and allow to proof. Sift together salt and flour. Make a well in the flour mixture, and pour the yeast mixture into the well. Using a fork, bring in the flour mixture until it forms a dough. Knead for a few minutes until the dough is springy and holds together, (add more flour if necessary). Put the dough in a floured bowl, cover with a damp towel, and allow to rise in a warm room for one hour or until doubled in size. Punch down the dough, divide into four sections. Roll out each section to make either a pizza or a calzone. Top with your favorite toppings, drizzle some olive oil on there, and pop in the oven.
Bake at a 450-500 degree oven for 10-15 minutes, or until the dough is golden brown.

I give this calzone dough recipe a 10. Sparkers...you can make 8 calzones with this recipe instead of 4....I filled mine with 1/2 cup ricotta cheese...1/4 cup pineapple tidbits...oregano..rosemary...basil...pars
