1/2 cups oats
zuchinni shredded to make 1 cup (slice balance of zucchini for later use)
1 small onion chopped
2 cloves garlic minced
2 tblsp nonfat milk
1 small red bell pepper diced small
1/4 tsp basil, oregano, salt and pepper or to taste
glaze
1/4 cup ketchup
2 tsp mustard
1 tsp brown sugar
Directions
preheat oven 350 combine all ingredients except glaze combine well place on cookie sheet sprayed with pam place sliced zuchinni around meatloaf bake 55 minutes add glaze continue bakgin 10-15 minutes
