Ingredients

Oat Bran - 1 1/2 C
Wheat Bran - 1 C
Flour (white or whole wheat pastry) - 1 C
Flaxseed (ground) - 1 C
Baking Powder - 4 tsp
Cinnamon - 1 Tbl
nutmeg, ginger, clove - 1 tsp
whole orange - 2
eggs - 2
brown sugar .5 C
splenda 1 C
Canola oil - 1/4 C
Buttermilk (lowfat) - 1 1/2 C
Baking soda - 1 tsp
Raisins - 2 small boxes
Craisins - 1/2 C
Directions
Makes 18 muffins
Preheat oven to 375
Add all dry ingredients together
Wash oranges - cut them into 1/8's - and put into food processor and process.
Add eggs and sugar (brown and splenda) and oil and process.
Add buttermilk and baking soda and process.
Add liquid ingredients to dry ingredients and mix. Batter will be thick, but if too thick add a little more buttermilk.
Add raisins and craisins and fill muffin tins fully.
Optional: can top each muffin with walnut or pecan.
Bake for 20-30 minutes
