Introduction

I love omelets so I decided to use egg beaters with one egg to decrease the calories. Use cooking spray to saute vegetables and to cook the omelet instead of butter or oil. Use a non-stick skillet. You can substitute any vegetable or meat (just be careful about the calories of the meat you use). Note:The use of cheese is optional. If you add 1/4 cup of cheddar cheese it pushes the calories to 415. This omelet is huge so I usually only allow myself this on Sunday for a late breakfast/brunch after church. Ingredients

    Egg substitute, liquid (Egg Beaters), 1/2 cup
    1/4 cup cheddar cheese (optional-recipe is 415 cal w/cheese)
    Egg, fresh, 1 large
    sliced Mushrooms, cooked, 1/2 cup
    Onions, raw, 1/2 cup, chopped
    Bacon, 3 medium slices, cooked
    *PAM - Olive Oil Cooking Spray (0.4 sec spray), 1 serving

Directions

Spray a non-stick pan with PAM and saute onions and mushrooms. Crumble cooked bacon in with sauteed mushrooms and onions and stir just to mix together. In a non-stick skillet, spray Pam and let it get hot. While skillet is getting hot beat together Egg-beaters and fresh egg. Add it to the skillet then add the vegetables and bacon. Fold omelet over once it is cooked enough to your specification.
