Introduction

Delightfully quick on a rushed night and flexible enough that you can use just about any vegetable(s) you want this tuna casserole is a hit with my whole family. This is easily doubled as well. You can serve half and freeze the other half to be warmed up and served another time too. Ingredients

    1 can Cambell's cream of chicken, mushroom, or celery soup
    1 can water
    1 Tbsp. lemon juice
    1 Tbsp. dried minced onion
    1 tsp. salt
    1/4 tsp pepper
    1 can tuna packed in water, drained and flaked
    1 soup can full of peas or other vegetable,
    1 soup can full of Instant Rice (5 min)
    1 cup shredded cheddar cheese

Directions

Pour cream soup in saucepan, add 1 can water, lemon juice, salt, pepper, minced onion and bring to boil. Add tuna and vegetable and return to boil. Remove from heat. Add rice and 1/2 of cheese and stir. Sprinkle remaining cheese on top. Cover and leave 5 minutes for rice to cook and cheese to melt. Serves 6 1/2 cup servings.

    This is a great recipe! It's a quick meal for weeknights, and tastes great. I love mushrooms, so I added a small can of mushrooms to the recipe, but there are so many ways that this can be tailored to your taste. My husband hates peas, but loved them in this! - 8/19/09

    Incredible!
    Just finished making this for my son (7 yr) and I. I microwaved 60 second brown rice and added to it. My son did not want to try it because he said it looked nasty but after tasting it he is now on his second serving! Very tasty and quick recipe! - 1/1/10

    I really liked this and will make it many times. I've made a similar recipe with ground beef, but I like this better. I used a little mozzarella cheese instead of cheddar just on the top. It was great! - 7/26/09
