Introduction

This is called a salad but it is more like a salsa. I have also eaten over greens and it is tasty that way too. Half a batch makes quite a bit so that is typically what I do. Ingredients

    1 pkg frozen corn, thawed
    2-3 tbsp vegetable oil
    1/2 cup chopped red onion
    6 Roma tomatoes, chopped
    1 Red pepper, chopped
    2 tsp minced garlic
    2 cans black beans, drained and rinsed
    1 cup fresh cilantro, chopped

    Dressing:
    3/4 tsp ground cumin
    6 tbsp fresh lime juice
    5 tbsp vegetable oil
    2 tbsp cider vinegar
    salt to taste

Directions

Preheat oven to 450 degrees. In a medium bowl, combine corn and oil. Toss to coat. Spread corn on an ungreased baking sheet. Bake 18-22 mins. Stir every 5-10 mins. Cool. In a large bowl, combine cilantro, onion, pepper, tomato, garlic, beans and corn. Mix well. Add dressing. Toss gently. Serve immediately (but still good the next day).
Makes about 10 1-cup servings.
