Ingredients

    1 cup skim milk
    1Tbsp lemon juice
    1/2 cup flax seeds

    2 cups Whole Wheat Flour
    1 cup Old Fashioned Oatmeal
    1/2 cup flax meal
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/2 tsp Sea Salt
    1/2 tsp Cinnamon
    1/4 tsp Ground Nutmeg

    1 cup Canola Oil
    1 cup Organic Sucanat
    2 eggs
    2 Tbsp Vanilla

    2 cups roughly chopped Almonds
    1/2 cup dried cranberries

Directions

Mix lemon juice and milk (or use lowfat buttermilk) with the whole flax seeds and soak for about 2 hours.

Combine the dry ingredients.

Then beat the oil and sucanat together and add one egg at a time, mixing, and then add the vanilla.

Add the wet ingredients, including soaked flax seeds, to the dry ingredients and mix until combined.

Fold in the almonds and cranberries.

Bake at 350 degrees for 15 minutes.

    Incredible!
    This is a family favorite...I tend to add a little more cinnamon and soak my raisins...best oatmeal raisins...just keep disappearing out of the freezer - 11/7/10
