Ingredients

1 cup whole wheat flour
1/2 cup white flour
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 egg
1/2 cup sugar
1 tsp vanilla
2 Tblsp canola oil
1/4 cup unsweetened applesauce
1 tsp citrus zest (I used lime)
2 tsp white vinegar*
2/3 cup (less 2 tsp) milk - I used 1%*
1/5 cups fresh or frozen mixed berries** of your choice, I used fresh raspberries, blueberries and strawberries
* or omit vinegar and milk and use 2/3 cup lowfat buttermilk, but not many people have that on hand.
**If using frozen, do not thaw.
Directions
Makes 12 muffins
Preheat oven to 375 degrees and lightly grease muffin tins
Place 2 tsp vinegar in 2/3 measuring cup then add enough milk to bring to 2/3 cup. Set aside for at least 5 minutes (this is a buttermilk substitute. If you have lowfat buttermilk, then use 2/3 cup of that and omit the vinegar/milk concoction)
Stir together flours, baking soda, baking powder , salt and cinnamon. Set aside.
In second bowl, beat egg with sugar until smooth. Mix in vanilla, oil, zest, applesauce.
Add wet ingredients to dry. Mix until just blended. Fold in the berries. Don't over mix the batter so colors bleed. Muffins may turn out tough if batter is over worked.
Spoon mixture into muffin tins and bake for 12 to 18 minutes or until a toothpick comes out clean.
