these cookies have a nice soft texture. Ingredients

3 cups rice flour
1/2 cup corn starch
1/2 cup soy flour
2 tsp baking powder
2 tablespoons ground cinnamon
1/2 teaspoon ground cloves
1/2 cup corn oil
2 large eggs
1 cup granulated sugar
1/2 cup brown sugar
2 cups unsweetened applesauce
Directions
Pre heat oven to 375 degrees.
mix dry ingredients (first 6 ingredients) and set aside.
put corn oil and sugars in bowl and mix well. Add eggs and mix again. Add applesauce and again mix. Gradually add in dry ingredients until well blended.
Place on cookie sheet by spoon full and make sure they are uniformly sized so that the kids wont argue over them. I use an ice cream scoop to measure mine.
Place an inch apart and bake at 375 degrees for 11 minutes.
Makes 48 2inch round cookies
