Introduction

This is a delicious and easy recipe I received from my Mother in Law. It makes 12 sandwiches at least and is good to have for a vacation, cookout or picnic. Ingredients

    1 whole chicken, bone and skin removed, shredded/chopped
    1 cup of chopped grapes
    1/2 cup of chopped onions
    1/2 cup of chopped walnuts
    1/4 cup of chopped apple
    4 tbsp of light mayo (more or less according to your taste)
    3 tsp salt
    1 tbsp pepper

Directions

Boil chicken for 1 1/2 hours with 1 tsp of the salt. While chicken is cooking, chop fruit, onions, and walnuts and mix together. Let chicken cool before removing skin and bones and shredding. Add the fruit and walnut mixture to chicken and then add mayo (to your liking) with the rest of the salt and pepper.
