Introduction
I named this one for my sister who is going to Weight Watchers to lose the baby weight. It is WAY simple and uber tasty. I love a little spicy to keep the satisfaction up! Ingredients

4 ripe Roma Tomatoes, stems removed
2 green tomitillas, papery skins and stems removed (or all red if you'd rather)
1 jalapeno pepper, stems removed (seeds and membranes too if you like it less spicy)
cilantro to taste
2tsp olive oil
1/2 yellow onion, chopped
1/8 cup garlic (I used pre-chopped from a jar)
12oz raw large shrimp, peeled and de-veined
salt to taste
Directions
1. Boil the jalapeno pepper, green and red tomatoes until warm but not falling apart. Drain, leaving a small amount of the water, then blend with the cilantro until mostly smooth.
2. In a medium pot heat the oil and saute onions and garlic until the onions are translucent. Turn the heat to med/low and add shrimp and tomato mixture. Cover and let simmer until warm throughout and the shrimp are pink and curled up.
3. Serve in a bowel topped with shredded spinach and sour cream (count this separately, not included in the nutrition) or over rice. There are many ways to serve it actually. ;-)
